Our Guide to What's In Season... April

Spring is in the air here in the UK so we are looking forward to a new season's worth of fresh fruit and vegetables to enjoy. Whilst we still have a few weeks before the ubiquitous April crops are in full swing, we've put together some of our favourite produce, ready for delivery to your door.

Let's take a look at what's in season throughout April...

RHUBARB

Seasonal Rhubarb in your veg box delivery
Rhubarb is the perfect ingredient for desserts

Whilst some might associate rhubarb with a fruit it is actually a vegetable, and it arrives in droves during the Spring. This deep red, robust veg is perfect when used in a crumble, pie or as jam, and can be poached, stewed or roasted depending on how you plan to use it. Like many vegetables, rhubarb is packed with vitamins and minerals including vitamin C, K, B and magnesium; just remember to throw away any leaves as Rhubarb leaves are poisonous.

Try these tasty seasonal Rhubarb recipe ideas this April...

  • Roasted Rhubarb - This simply couldn't be easier! Rinse and trim the ends of the rhubarb before cutting into small pieces. Place the cut rhubarb into a shallow baking dish and sprinkle with some golden caster sugar. Cover the dish with foil and roast in the oven for 15 minutes at 180c (fan oven). After this time the sugar should have been soaked up. To finish off, shake the rhubarb and roast for an additional five minutes until the pieces are lovely and tender - enjoy!
     
  • Apple and Rhubarb Crumble - One of the most popular seasonal rhubarb recipes out there and for excellent reason - it's delicious! Take four thick slices of rhubarb and a large eating apple (peeled and sliced) and tip into an oven-proof dish. Sprinkle with caster sugar (3 tablespoons) and cover with a blended mix of 100g flour, 125g caster sugar, 60g rolled oats, 60g butter and 30g chopped nuts. Bake at 200c for 45 minutes and serve with some fresh Devonshire clotted cream from our online deli.
     
  • Rhubarb Coleslaw - Away from the dessert options, why not give fresh rhubarb coleslaw a try? As the weather warms up, this seasonal side dish is perfect for a spring bbq or served in a sandwich. Mix fresh lemon juice with two tablespoons of caster sugar, salt & pepper. Thinly slice 150g of rhubarb, 150g of radishes and 150g of celery and toss in with the lemon juice - easy!

Seasonal carrots in your veg box are perfect for soup

When it comes to nutritional value, it's hard to beat baby Chantenay carrots. You may have heard it said that carrots help you 'see in the dark', and whilst they don't quite have super-powers, these tasty, crunchy bites can aid in good vision thanks to their vitamin A content. As well as this, Chantenay carrots, now in season during April, keep your lungs and skin healthy and as act as an antioxidant. We are very pleased that Chantenay carrots are available right here in the UK as they are extremely versatile and extremely tasty.

Try these tasty seasonable Chantenay carrot recipe ideas this April...

  • Roasted, Honey-Glazed Carrots - These are perfect accompanied by a juicy shoulder of pork! Peel your carrots and toss in olive oil with salt and pepper. Roast in the oven at 170c (fan oven) for half an hour before taking out and drizzling with white wine vinegar and honey. Toss and place back in the oven for a further 20 minutes and enjoy.
     
  • Carrot & Sweet Potato Soup - A beautiful warming soup to enjoy on a fresh Spring evening. This recipe will serve around four people or alternatively, leftovers can be kept in the fridge to enjoy later in the week. Peel and cut around 300g of carrots and 500g of sweet potato and place into a roasting dish. Season and toss with olive oil before roasting for 35 minutes at 200c.While you wait, fry two onions in a deep saucepan for 10 mins, add two crushed garlic cloves and a litre of vegetable stock. Simmer for 5-10 minutes. Finally, transfer your roasted vegetables and use a hand blender to puree until smooth. For a creamy finish, stir in some crème fraiche, pour into a bowl and season with black pepper.

 

CAULIFLOWER

Vegetable Boxes for Delivery | Seasonal Cauliflower
Cauliflower cheese is a firm favourite with veg box lovers!

Cauliflower is another great, seasonal vegetable that is highly versatile, low in calories and rich in vitamins and minerals. As well as used as a side dish, Cauliflower can be mashed as an alternative to mash potato, used in soups, salads, and even eaten raw. With a fairly neutral flavour, Cauliflower goes well with a large selection of foods; from potatoes to squash, beef to pork, and mustard to cinnamon.

Try these tasty seasonable cauliflower recipe ideas this April...

  • Cauliflower and Potato Curry - If you want to stock up on your vegetable intake and are happy to forgo the meat, this curry dish is a fantastic choice. Boil three medium potatoes and peel (once cooled), before cutting into squares. Blanch a cauliflower for two minutes and cut into small florets. In a frying pan, toss a pinch of mustard seeds, cumin and fenugreek seeds along with 1-2 red chillies. Add one medium onion and one green chilli then fry for a further 10 minutes. Add the cauliflower, reduce heat and simmer for 7 minutes. It's now time to add the potatoes, stir through and cover the pan for 7 minutes until the potatoes are cooked through.
  • Creamy Mashed Potato - If you're watching your carb intake, then this popular substitute for mashed potato is bound to go down a treat. Steam cauliflower florets with crushed garlic cloves in a steamer. Cover and steam for 15 minutes then place into a food processor. Add two teaspoons of olive oil, 100g of buttermilk, salt and pepper and blend until smooth and creamy!
  • Cauliflower Cheese - A list of cauliflower recipes isn't complete without a mention of cauliflower cheese! Boil your cauliflower in salted water for two minutes, drain and place into an ovenproof dish. In a saucepan, mix 50g of plain flour, 50g of butter and stir for two minutes before removing from the heat and gradually adding in 450ml milk - stirring continuously until it forms a smooth sauce. Return to the heat and simmer for a further three minutes. Beat in two egg yolks, a dash of mustard and Worcestershire sauce, season, and pour over your cauliflower. Top with a mixture of your favourite cheeses and bake for ten minutes.
